Apple Nachos are a quick and easy snack that the kids will love having ready when they walk through the door from school. I’m going to pretend for a minute that when my kids walk through the door after school every day, there is a freshly prepared, perfectly nutritious snack waiting for them.
Well, here is the thing, I’m lucky to have the house cleaned, the toddler napped and happy, and myself pulled together for the day by the time they get home. So, I have learned how to make simple, heathy things that they will actually eat!
Here is one of my quick go-to snacks that doesn’t even last more than 5 minutes. And they usually fight over who gets to lick the plate (yes, we have pretty great manners over at my house)
Apple Nachos
Ingredients
- 1 apple sliced
- ¼ c dark or semi sweet chocolate chips
- 1 TBSP almond butter
- ½ TBSP coconut oil
- Topping options: mini m&m's, vanilla chips, mini dark chocolate chips, chopped almonds, or coconut
Instructions
- Slice apple thinly, place on serving plate
- Melt chocolate chips in microwave for 30 second intervals. Stir in between each interval until completely melted. Transfer to small Ziplock bag
- Melt almond butter and coconut oil together in a microwave until soft, but not completely melted. Transfer to another small Ziplock bag
- Drizzle apple slices with chocolate and then almond, coconut mixture
- Serve with favorite toppings
- Enjoy immediately
