Don’t you just love a big bowl of warm soup on a cold winter’s night? I know I do! That is exactly why I came up with this Thai vegan soup option that is comforting enough to forget there is still snow outside. You might even think you’ve gone to Thailand on a dreamy vacation….
I recently entered a recipe contest with JSL Foods using their Fortune Udon Noodles and since I wanted to make it vegan, we went with the delicious mushroom flavor. This soup is very simple to make but sure gets extra points for color and presentation. Your family might think you’ve spent all day making it!
Coconut Lime Thai Noodle Soup
Gluten Free, Nut Free
Prep Time 10 mins/ Cook Time 15 minutes
Serves 4
1 Tablespoon olive oil
1 packet mushroom mix (from Fortune Udon Noodles)
2 teaspoons red curry paste
2 teaspoons lemongrass paste
4 cups vegetable broth (low sodium)
1 cup red bell pepper, sliced
1 cup asparagus, chopped, ends removed
½ cup sliced carrots
1 can light coconut milk
2 packets Fortune Udon Noodles, Mushroom Flavor
½ cup sliced mushrooms
1 lime
Fresh cilantro
4 teaspoons sesame seeds
- Place a stockpot over medium/high heat. Add in oil, Udon mushroom packet, curry and lemongrass paste. Saute for 2-3 minutes stirring constantly
- Add in broth, red pepper, asparagus and carrots. Bring to a slight simmer and cook for about 10 minutes.
- Add in coconut milk, Udon noodles and mushrooms, simmer for an additional 5 minutes.
Squeeze in juice of one lime and remove from the heat.Divide into 4 equal servings. - Top with cilantro and 1 teaspoon of sesame seeds.
- Serve hot
