Broccoli and Rice Casserole

Broccoli and rice cauliflower has long been a family favorite at the dinner table. In fact, this is one of the staple recipes moms typically use when introducing their kids to broccoli. But the good news is this recipe can still make an appearance at your dinner table just with one easy substitution of cauliflower rice instead of white rice. This is a higher fat/lower carb dish which can help boost the metabolism.

Broccoli and Rice Casserole, White Chocolate Chip Blondies
  1. Heat up a medium size skillet over medium/low heat.  
  2. Melt butter and saute garlic for 2 minutes or until fragrant. Add in cauliflower, broccoli and salt and pepper. 
  3. Cook mixture for about 4 minutes. Remove from heat.
  4. Stir in cheeses and thin out with almond milk. 
  5. Serve warm
