Adding some protein to this pumpkin mixture actually makes the filling that much tastier. Feel free to play around with the amount of monk fruit but the sweetness of the graham cracker and whip cream give it just enough that it’s such a perfect combo! Also did I mention this dessert is under 200 calories?!?!
- Blend the cottage cheese, pumpkin puree, pumpkin pie spice and the sweetner until pureed. I like to hit the pulse button about 10-15 times.
- Scrape out all of the filling mixture into the pie crust.
- Top with whip cream and serve
